Mariem Ellouze, Nestle, Switzerland
Mariem Ellouze first graduated as an Industrial Biology Engineer, then took a Master Degree in Innovation in Food Industry and pursued a PhD on predictive modeling at the Veterinary School of Alfort, France. She previously worked as a project Manager in food microbiology and then as a Project Leader in Food Safety and Risk Assessment at the IFIP meat quality and safety department. She animated different workshops and seminars, presented conferences and published several articles on the topic.
She is now a Food Safety Microbiology Specialist at Nestlé Research Center. She evaluates existing and new products/processes/concepts, provides technical assistance and scientific advice and develops tools and guidelines to help R&D and Operations units to conduct microbiological risk / exposure assessments.
